There are a billion and six paleo muffin recipes out there, here’s my favourite variation.
Stuff you will need
8 bun cases (I’ve had bad luck with paper ones so I prefer silicon)
8 eggs for ten buns
a fist sized sweet potato (carrot is also good, or a mix of both)
half a pepper or so half a dozen mushrooms
1 strip of bacon per 2 eggs
herbs and shit
Prep
Stick the bacon under the grill. This recipe is also good without bacon, but with oh yeah.
Grate the sweet potato and/or carrot, press it into the bun cases to make a basket, season and stick in oven for 10 – 15 minutes.
Chop up the rest of the veg and give it a good saute in the pan. If you’re not making any vegetarian buns, you can throw the bacon in here as well. Chop up bacon, divide it and the veg between the bun cases.
Bung all the eggs in a bowl, add herbs and whisk the hell out of it. Some recipes use coconut milk, but I haven’t tried that yet. While its still frothy, spoon it into the bun cases Stick it in the oven for 20 – 30 minutes.
Done.
Keeps for 5 – 7 days, optimal reheat time is 30 seconds in microwave, but also good cold.
